Nature has incredible ways of catching attention. If artichokes are one of the most intriguing shaped vegetables (OK, flowers) out there, the title of most fascinating vegetable colours goes to the aubergine. From the small green Thai apple aubergines, to white, mauve and dark purple ones the colour array these fruits show never ceases to fascinate me. After yellow tomatoes and round zucchini, it’s the turn of striped aubergines for the last instalment of this small vegetables series. I searched the web for more information on these eye-catching vegetables but found little apart a reference in seed catalogues and an occasional mentioning in connection to Greek cooking. Not much but a starting point for a dish. So let it be: Greek style.
